Sweet Potato Cornbread
M, E, P, N
3/4 cup yellow cornmeal
3/4 cup flour
1 T. baking powder
dash ground cinnamon
dash ground nutmeg
1 tsp. salt
1/2 cup milk-free margarine, softened
1/4 cup light brown sugar, loosely packed
3 T. water, 3 T. oil, 2 tsp. baking powder, mixed together
1 cup mashed sweet potato
1 T. orange juice
1/4 cup plus 2 T. water
1/2 cup frozen corn, thawed
Preheat oven to 350°. Coat 9-inch pie pan with cooking spray. Set aside. In medium bowl, combine cornmeal, flour, baking powder, cinnamon, nutmeg, and salt. Set aside. In large bowl, cream margarine. Add brown sugar and blend well. Add water, oil, and baking powder mixture; mix well. Add sweet potato, orange juice, water. Blend with electric mixer on medium-high speed until smooth. Add dry ingredients, mix well. Fold in corn. Pour batter into prepared pan. Bake 35 to 40 minutes, until edge is golden-brown and break springs back when lightly touched.
